You may have grown up with Pecks as a spread but now we’re changing the ball game. It’s time to get to know them as a dip enhancer! We’ve come up with a delicious dip recipe for each Pecks spread. So next time you have people over try a couple of these yummy recipes!
1. PECKS Salmon and Lobster Capsicum Dip
This recipe is great for entertaining; simply serve with rustic bread, carrot and celery sticks. If you like a really creamy dip, you can also add a dollop of Greek yoghurt to the mix. However we think it’s flavorful enough without.
Ingredients
- 2 red capsicums
- 1 garlic clove
- 1.5 tablespoons of olive oil
- ½ teaspoon of chilli flakes
- 2 tablespoons of PECKS Salmon and Lobster
- Salt and pepper to season
Method
- Preheat the oven to 200°C and place capsicums on a baking tray. Pierce each capsicum and cook for 25 minutes or until the skin has blistered. Set-aside until cool.
- Peel capsicums and discard of seeds and membrane.
- Blend capsicum, Pecks, chilli, garlic and olive oil together in a blender until smooth. Season with salt and pepper.
2. PECKS Devilled Ham Hot Cheesy Dip
This recipe is great for colder days where you want something comforting and warm. You can’t go past a slice of warmed ciabatta with a generous serving of this dip!
Ingredients
- ½ onion
- 2 tablespoons of butter
- 2 tablespoons of chives
- 200 grams of cream cheese
- ½ cup of shredded cheddar cheese
- ½ cup of diced ham (optional)
- 2-3 tablespoons of PECKS Devilled Ham
Method
- Melt butter in a pan and dry onions until golden brown. If you are using extra ham, add to the onion mix and fry for a further 5 minutes.
- Add cream cheese to pan and stir until soft. While this is happening, preheat the oven to 200°C.
- Then mix in the cheddar cheese, chives and PECKS Devilled Ham.
- Once combined pour mixture into a baking dish and bake for 20 minutes or until cheese has melted.
- Serve hot!
3. PECKS Chicken and Ham Onion Dip
This recipe is ridiculously easy to make. It tastes like you’ve taken ages to make it but in reality you can whip it together in minutes!
Ingredients
- 1 cup of sour cream
- ¼ cup of mayonnaise
- 1 packet of French Onion Soup
- 2-3 tablespoons of PECKS Chicken and Ham
Method
- Combine all of the ingredients together in a bowl using a spoon.
- Chill if you prefer.
4. PECKS Anchovette Hummus
Hummus is a classic dip that everyone knows and loves. However adding our Anchovette will take it up a notch on the delicious scale.
Ingredients
- 1 can of chickpeas
- ¼ lemon juice
- ¼ cup of tahini
- 1 garlic clove crushed
- 2 tablespoons of olive oil (possibly more depending on smoothness)
- ½ teaspoon of cumin
- ½ teaspoon of salt
- paprika for seasoning
- 3 tablespoons of PECKS Anchovette
Method
- Combine tahini and lemon juice in a food processor. Scrape down sides a few times before making sure it’s smooth and creamy.
- Add olive oil, garlic, cumin, salt and PECKS Anchovette to the mixture. Blend for 30 seconds before scraping down the sides and repeating the process.
- Rinse chickpeas under water until water runs clean.
- Add half of the chickpeas to the mixture and blend for a minute.
- Add the other half of the chickpeas to the mixture and blend for 1-2 minutes or until thick and creamy.
- If you find it’s not creamy enough add more olive oil or tiny bits of water until desired consistency.
- Spoon mixture into a bowl, season with paprika and drizzle with olive oil. Now its ready to serve!
