Not only is it an easy way to set up food for guests and friends, platters are everything in one! They’re convenient, easy to prepare, provide lots of choice, versatile and portable, and they look good! Plus, there are no hidden nasties, so everyone will know exactly what food you’re serving - it’s that real and that fresh! We’re here to help you create a light and easy spring platter with these 4 easy elements. Cheese What’s a platter without the cheese? Try adding a variety of hard and soft cheeses to widen the choice. Soft cheeses such as Camembert, brie and hard cheeses, like Edam, Gouda, Parmesan or Pecorino Romano, are lovely additions to any spring platter. Spring fruit such as blueberries and strawberries complement the flavour of cheese. Make it interesting, but stick to a maximum of 3 or 4 main cheeses so that it’s easier to pair with drink. It’s also a good idea to pre-slice the cheeses so that it’s easier for others to eat. Meats Our mouths are just watering thinking about smoked meats! Think smoked salmon drenched in olive oil, topped with capers. Or Spanish Serrano ham, Italian prosciutto or salami. So. Good. Vegetables You can add fresh seasonal vegetables that have been oven baked or pan cooked to your platter, but we think they do best in a pasta salad! Try presenting them in a bowl in the centre of your platter, surrounded by all other elements of the spread. Why not try this delicious Chicken Salad with Spinach & Ricotta Tortellini recipe? Check out this spring greens guide for inspiration on what to use and in which dish. Sure to impress! Bread If you’re making lots of pasta salad, feel free to skip on the bread. Otherwise, plate up! Like the cheese, bread is best served when sliced. You can try plain baguette or an olive loaf if you want to make it more interesting. Bread pairs nicely with our Basil and Cashew Pesto Stir-Through - this Bruschetta with Latina™ Fresh Basil & Cashew Pesto recipe is a nice finger food-friendly addition to your platter!
