Sit outside and enjoy the sun, make the most of summer’s fruit and veg by eating delicious finger foods and drink delectable fruity drinks. However, setting up and cooking can be draining, so we’ve put together some great recipes that are super easy so you can spend more time sipping tea. First on the summer list is our famous Salmon and Lobster Sushi Stack. This is a great way of jumping on the sushi bandwagon but in a way that will set you apart from the rest. By adding Salmon and Lobster Pecks you’ll immediately add a burst of unexpected flavour – your friends will love it. This one is for the cheese lovers out there – Baked Camembert with Pecks. For this recipe, all you need to do is: Select your favourite camembert and place into a ramequin. With a fork, create a few holes in the camembert. Grab your favourite Pecks and place small amounts into the spiked holes. Cover with tin foil and bake in the oven at 180°C for about 10 minutes. Do this just before you are ready to serve because serving it warm is absolutely amazing! Place on a wooden board and voila! A super easy option is to have a fruit and nut platter with dips and your favourite Pecks spreads. Include some toasted ciabatta or olive bread and watch how quickly it will disappear! Top tip: Add a spoonful of Pecks to your favourite dip recipe, like spinach and artichoke, hummus or sweet potato and cashew. You’ll be surprised how much of a difference just one spoonful will make. If you’re hosting in summer remember to stick to things that are in season and that fair well in the heat. Think berries, fish, salad and foods that aren’t too messy.
