But why not add some Mexican flair? Something as simple as a squeeze of lime or mixing meat or vegetables with spices can go a long way! Here’s how you can take an ingredient or two typically used in Mexican cuisine and add it to these dishes: Lasagne Minced beef is a common filling for tacos – and it’s also a standard filling for Italian lasagne. Try adding tomato salsa or salsa verde instead of tomato sauce, or mix up the mince in spices such as cumin or paprika. For a vegetarian-friendly version, try adding refried beans, baked vegetables or pico de gallo (fresh, uncooked chopped tomato and onion) between sheets. Pasta Bake Why not take your taco ingredients and add it to your pasta? We suggest black beans, your choice of spice-soaked meat or veg, corn, capsicum, fresh chopped tomato – topped with cheese. Eggs and Toast When you think about it, Huevos Rancheros is pretty much the Mexican version of your standard eggs and toast - so it only makes sense to combine both! Tomatoes, Mexican passata (tomato puree) and black beans will go great on top of your eggs and toast. Sauces Plain smashed avocado or tomato paste makes a great base for all kinds of flavours! Make your next sauce Mexican by adding your favourite spices, a dash of lime, garlic, onion and chilli for an extra kick of flavour.
