Although traditionally eaten during the festival season, Chicken Tinga tacos are now enjoyed all year round. The local recipe involves shredding succulent, seared chicken into a pan of lightly bubbling Tinga sauce made from a delicious blend of tomatoes, onions, garlic and smoky chipotle chillies. Having soaked up the Tinga sauce, the chicken is placed into a lightly browned taco. The finishing touch is a scatter of crunchy lettuce, diced avocado and coarsely chopped coriander to give that authentic taste in every bite.
